Not feeling festive yet? Fear not, we introduce Christmas at Country Terrace to give your festive barometer a mega boost.
let’s get started
A four-course meal is most definitely a marathon and not a sprint therefore beginning with zingy, fresh and perfectly light seafood is a winning starter. Pride in the presentation is consistent at Country Terrace and we adore this fabulous wooden serving boat adorned with tuna tartar, salmon carpaccio and Crudo di gmaberi (fresh raw prawns, dill, lemon, and olive oil). The accompanying ginger root, wasabi and soy invite you to build each bite to suit your taste. Every mouthful is a burst of clean flavours leaving your palate cleansed and taste buds prepped for the mains.
The main event
Following Joseph’s trusty guidance and knowing how well these guys deliver meat mains we opted for the USDA Prime Dry-Aged Boneless Strip Steak and a Beef Wellington, naturally accompanied by roast potatoes. Would it be Christmas without them?
The flame-grilled USDA prime dry-aged steak is so worthy of its pride of place on the Christmas Eve Gala menu. The dry-aging process concentrates and intensifies the flavour of the meat and the high-fat content of this cut increases its tenderness, resulting in a succulent steak with a real depth of flavour.
Sound the fanfare!
Every now and then a dish is so knock out, you feel compelled to return as quick as humanly possible to relive the moment whilst singing it from the rooftops. Country Terrace’s Beef Wellington is just that. Made with a high-quality cut of beef, usually fillet, tenderloin or filet mignon, then coated with pâté and duxelles (a delicate mixture of mushrooms, onions and herbs) and wrapped in Parma ham and puff pastry to retain all the mouth-watering flavours. Their showstopper version is made with seared New Zealand beef fillet and it’s utterly sublime.
The beauty of taking your time is finding room for dessert and today chocolate was calling us, the gooey, rich, velvety type and that’s exactly what was delivered. Introducing Country Terrace’s chocolate fondant with a melting molten middle, balanced with creamy salted caramel ice cream and juicy figs. Joy on a plate. Say no more.
No ordinary cheese board
The finale and all stops were pulled out! Possibly the prettiest cheese board we’ve ever seen and the most special! A fine Occelli al Barolo alongside a Tomme de Chèvre with black truffles and a delectable pecorino were served with peaches and a home made fig chutney with a light, crispy and immensely buttery biscuit.
